“Time To Plant Your Herbs”
I have often been asked this question:
“Which herbs do you recommend that I start with in my garden?”
Here are my suggestions for BASIC SEVEN HERBS that would have the greatest
variety of uses in cooking, in healing, and in scenting the
home/office/classroom, etc.
CHIVES - mild onion flavor, very versatile. Used in a variety of dressings,
egg and cheese dishes, to marinate any kind of meat, and for flavoring
butter - wonderful in cream cheese + yogurt as a dip. Make a tea to spray on
plants to get rid of aphids. Soon you will be able to add their mild tasting
flowers to your salad of fresh greens.
LAVENDER - the flowers are used for cakes,
cookies, jellies, icing, as a tea to alleviate stress headaches (sometimes
migraines), as a tea to put in the bath to relieve stress. Cosmetically, the
tea makes a tonic water for delicate and sensitive skin, and an antiseptic
to fight acne. Other health-related uses are: drink as a tea to calm the
nerves, ease flatulence, dizziness fainting and bad breath. Essential oil:
six drops in the bath calms an irritable child - twice that many calms the
adult version - also used in massage for achy muscles and cellulite, throat
infections and skin sores, anxiety and insomnia. The flowers are well-known
for use in potpourris and sachets.
LEMON BALM or CHOCOLATE MINT - These plants
are in the same plant family, mints. Best grown in pots, in the semi-sun,
and kept well-watered and fertilized. Used in wonderful sun teas, chopped in
unique-flavored dressings, jellies, cakes, cookies, icings, fruit salads,
fruit drinks and wine cups. Both herbs settle upset stomachs, and Lemon Balm
is said to uplift the mood. Put the fresh leaf on insect bites and sores.
Take as a tea for bronchial catarrh, feverish cold and headaches. Dried
leaves are very nice in potpourri.
PARSLEY - Use the leaves as an ingredient in
Pesto. A great tasting addition to most vegetable, egg and meat dishes,
soups, potatoes and salad dressings. The root has long been considered a
healing nutrient for the kidneys. Its leaf is also made into a tea for a
digestive, a soothing eye bath, and a hair tonic and conditioner. Use the
crushed fresh leaves to cleanse and soothe insect bites, sprains and wounds
(called a poultice). Grow by roses to enhance their scent and health.
ROSE - The rose is not only the ultimate in
scent and beauty in the garden (though SOME would dispute that Lavender is),
but also it is the safest healing substance known. Most of use have used
Rosewater and Glycerine, and tasted Turkish Delight or the syrup on Baklava.
Beyond these delights is dried rose petals in potpourri, crystallized petals
as decoration, a mysterious addition to salad, apple or cherry pie, in jelly
or jam. Medicinally, massage oil soaked with the flower petals is used in
massage to enhance circulation, cleanse the blood and tone capillaries, and
soothing tension.
ROSEMARY - great flavoring for many dishes,
especially chicken and beef. A “magic” ingredient in marinara sauce. A
delightful tea, said to help forestall dementia, also used in the bath to
stimulate blood circulation, as an antiseptic gargle and mouthwash, and as a
scalp wash to increase hair growth. Good for aching joints and rheumatic
pains
THYME - There are many varieties of thyme,
such as lemon, English, Nutmeg. Thymes are often used to flavor fish and
meat dishes and savory breads. Thyme is a universal remedy for upper
respiratory problems, and is known to clear the sinuses. Sweeten the tea
with honey for coughs and sore throats. The tea is used as an antiseptic,
organic wash for the home, office, classroom and day care and as an
antiviral air spray. Thyme may also help you sleep (tea or sleep pillow),
relieve muscle pain and help the body resist infection. Lemon thyme is very
nice in potpourri and therapeutic baths.

A CELEBRATION OF VIOLETS

A perfect Mother’s Day treat!
There will be three mini-classes during the Celebration of Violets.
Each costs $5.00 per person.
1:00 pm ~ Learn as you watch Joanie make some of her tantalizing
Violet Jam - and take some home with you.
2:00 pm ~ Discover the healing uses of the herb - try your hand at
making some of these preparations, for: stress relief, cough and
bronchitis, skin problems such as bruises, acne, itching,
healing eye bath, etc.
3:00 pm ~ “How to” cook and make tea with the flowers, including
how to crystallize the flowers, make a syrup.
Sample Chocolate Violet Cake.
Take a tour of the wild violet field. Pick a bowlful of violets, to help
make the projects in your mini-classes.

HERBAL HIGHLIGHT
"Herb of the Year" - CALENDULA
“Calendula officinalis”
has been chosen “Herb of the Year” by the International Herb Association.
It’s a cheery yellow or orange daisy-shaped 1 to 2 foot high annual flower,
great in the garden, vase or planter (thus its other name “pot marigold”).
It has varied applications, in use since the time of the ancient Egyptians,
who called it “kalends” because it was in bloom on the first day of every
month (calendar). It has been traditionally been used as an antiseptic and
skin healer, and doctors applied the leaves to treat open wounds during the
American Civil War.
In COOKING, the flower petals are used as
color and nutty flavor in butter, rice, yogurt and rice dishes, cakes and
breads, omelettes and meat soups.
In my blog you will find (sometime during the ’08 growing season) recipes
for “Calendula Cornbread” and “Egg Salad with Calendula and Chives”.
COSMETIC uses include making ointments and creams with the flower petals
which will heal, cleanse, and soften skin. You will also find detailed
information about making the healing cosmetic preparations, etc., in my blog.
MEDICINALLY, it helps heal varicose veins, inflammation, bruises, chilblains
and bedsores, and to any preparation which heals, soothes and is antiseptic.
In addition, you can make a mouthwash to heal after a tooth extraction.
It’s easy to GROW Calendula because it is a
self-seeding annual, once established in a garden bed.
To start it out, sow the seed directly onto prepared soil anytime mid-April
through the end of May. It likes to grow in a sunny to slightly shady area
with moderately rich soil. So, when grown in pots, it benefits from
bi-monthly applications of 20-20-20 liquid fertilizer, with a little seaweed
emulsion added.
