Anise Hyssop
Agastache foeniculum

Also called Blue Giant Hyssop and Licorice Mint, this plant is native to northern United States. Native American Cheyennes used flavorful Anise Hyssop as a medicine for depression, and the Chippewa bundled it with other protective medicines. Other tribes have used it to treat coughs. It is also known to increase perspiration and relieve bronchial congestion.
Anise Hyssop can achieve 3 feet high when it grows in ideal conditions of rich, moist soil. It will thrive in partial shade to full sun, happy in dappled shade or in places where the sun shines directly on them for only a short time during the day.
The beautiful purple flowers form dense spikes. The flowers and lush green mint-like leaves have a strong anise aroma that makes delicious cookies, jelly and tea. The flowers are also tasty sprinkled on salads. The flowers and leaves can also be dried to add color and scent to potpourri.
